Spring rolls are one of my favourite appetisers to have. During the free-time at home, I wanted to make spring rolls as I wanted to try my own filling apart from the traditional vegetable spring rolls which are very common appetisers that can be found in restaurant menus. Here is how I made spring rolls at home.
Here is the very short list of items I used to make spring rolls at home.
- 1 medium-sized potato
- 2 small tins of flavourless salmon (~200g of salmon)
- 5-6 broccoli crowns
- 1 table spoon of Olive oil (for sautéing)
- Salt to taste
- Pepper to taste
- 2 table spoons of Chinese chilli paste
- Spring roll sheets
Making the Filling
For the filling, I wanted to use salmon and boiled potatoes as they are some of the commonly used fillings in Sri Lankan appetisers such as fish cutlets and fish patties. Moreover, to make it more healthy, I decided to use broccoli.
Yes, I used broccoli!
To get finer pieces of broccoli, I grated the broccoli crowns.
I drained out the liquid from the salmon and smashed the pieces using a folk to break down any big chunks. Then, I cut the potato into wedges, boiled them, peeled off the skins and mashed it using a fork.
Next, I finely diced half an onion and sautéed it with olive oil. Then I added the grated broccoli and sautéed it for a few minutes until the broccoli was cooked. After this, I added the salmon and a little bit of salt and pepper according to taste and stirred well. Now remove this mixture from the stove.
After this mixture has cooled down to touch, I added the mashed potato and stirred the mixture well until everything is evenly combined.
Add Chinese chilli paste for a spicy kick!
Note: I added Chinese chilli paste as I wanted to make my filling spicy. You can totally skip this if you want, but for me, having a little spicy kick will make the filling more tasty!
Now the filling is done! Let’s move on to make the spring rolls.
Folding the Spring Rolls
I used store bought spring roll sheets as it is much easier.
One spring roll sheet can make 2 spring rolls. All you have to do is cut the sheet using a sharp knife along the diagonal.
Now place a small amount of the filling as shown below.
Now you can fold as shown in the gallery below step-by-step. To keep the sheet in place while folding, you can apply a little bit of water for the sheet to stick to itself.
You can repeat this process and make more spring rolls. The spring roll pack I used had 20 sheets and I was able to make 40 spring rolls.
Baking the Spring Rolls
Since the filling is cooked, you need to cook only the spring roll sheet. You can deep fry them or bake them. I baked my spring rolls at 1800C for about 20-25 minutes until they crisp and turn golden-brown. If you want, you can brush some egg wash or melted butter before baking.
You can enjoy these with a little bit of sauce, or you can enjoy them on their own. Either way, they taste great. 😀
Storing the Spring Rolls for Later
Of course, you can store these spring rolls for later!
You can put the prepared spring rolls in a plastic container and freeze them for later. When you want to have fresh spring rolls again, all you have to do is pop some frozen ones in the oven.
